Woven PUL - wovens are a thin material, like a blouse, and almost always cotton.  Cotton tends to wick moisture more quickly than polyester, so these fabrics shouldn't be depended on for long periods of time, such as overnight.  These are adorable and perfect for daytime use for most babies.  Wovens tend to fade more easily and are not as durable as knits.  Their biggest benefit is the huge array of designs and patterns available. 

Knits - These fabrics are slightly thicker than a woven, more like a tshirt.  They are soft to the touch and more pliable.  They wear better than wovens do and are sometimes polyester.  Knits, however, are much harder to find and do not come in nearly so many adorable prints.  Cotton knits will wick moisture more quickly than polyester knits, but cotton knits are longer-lasting than wovens. 

Flannel - 100% cotton. Flannel is very soft to the touch and quite cozy feeling.  It comes in a million different prints and patterns.  However, it doesn't wear well and fades quickly.  Flannel also pills up.  These are best for diapers that won't be worn for an extended time (such as a holiday diaper that won't be worn year-round).

Brocades - a very beautiful, delicate fabric.  These hold up to washings well, but need to be kept separate from anything velcro.  A vinegar rinse is suggested for the first washing to minimize fading.  My daughter had one brocade diaper that lasted a year before she outgrew it.  It was still a gorgeous diaper despite regular washings in hot water.  Brocades are polyester and do well for daytime use.  Some do wick more quickly than others.  In my experience, they last about 1 1/2 - 2 hours before wicking occurs.
